Paleo spaghetti and meatballs


Spaghetti is one of my all time favorite meals. So it was one of the first things I had to seek out, as becoming gluten free became essential. Many people say to just go and get gluten free noodles, but my goal in all this is to eat less processed foods. Thus I present the zucchini noodles.

Meatballs:
1 pound of ground beef
1 egg
1/4 of a cup almond flour
Any spices you like, I leave mine plain because I use the meatballs leftover for other things.

Mix together and cook in the oven or on a skillet however you do it.

For the sauce I added veggies like mushrooms to a jar of spaghetti sauce and cooked.

Zucchini noodles:
Zucchini, 2 small per person
olive oil

Use a julianne cutter to slice your zucchini into noodles and sautee them in olive oil for a few min until soft.
