Paleo Chicken Bacon skillet
 
 1 Leek, cleaned and chopped fine
1/2 pound of bacon
2 Lg Chicken breasts cut into bite sized pieces
1 tbsp. coconut oil
1 tbsp olive oil
2 cups spinach
1 clove garlic
Pinch of salt
Pinch of garlic powder
 
 
Cook bacon in oven. Meanwhile Cook leeks in coconut oil, and add chicken when leeks are browning. Cook until soft then add clove of garlic chopped and crunched up bacon into skillet and cook 3 min. Separately heat olive oil in pan and add spinach and salt, garlic powder cook for just a few min until the spinach is wilted. Serve chicken over spinach! Enjoy! Serves 4-5

I want to start by saying that I have never thought that food tasted any better. Every single paleo recipe from the above website has not ever disappointed me or my family. Everything I cook the kids gobble up.
 
 
The second thing I want to share some of my results. I say some because I am only 2 weeks in on this whole thing but seeing amazing things and I am sure that's not going to be all. First thing that happened was all my stomach aches totally vanished. I felt like a whole new person. Then I started sleeping way better, and waking early with no grogginess or tiredness. I have lost 7 pounds and 6 inches over my body. I feel like a million dollars, and you ant to know the most amazing part? I can eat as much as I want. No counting calories no worrying about it at all. I am breathing better, and my nails are growing like crazy. I have to cut them every couple of days now! I cannot say enough about this lifestyle. I am totally pleased and happy! Stay tuned for more recipes on the way!

Tips for eating paleo


Tips for eating paleo:

 

1.       Buy meats, veggies, fruit nuts/seeds, these you know are safe at any time.

2.       If you’re trying to lose a little bit of weight limit fruits to 2 a day and nuts to a small handful.

3.       Home make all your sauces and soups. These are very easy and only take a few extra min to make.

4.       Make enough to have leftovers, so you have something to grab in a pinch. Goes great for lunches too.

5.       Check all labels. I cannot emphasize this enough; there is gluten in EVERYTHING, including candy, imitation crab, condensed soups, dressings, sauce packets, frozen foods, and in the most unsuspecting places. And most likely your favorite foods, but no need to worry the internet has variations for just about everything J

6.       Learning to love real food can be hard, but try something new each week and if you don’t like it, you can try it a different way too. Never give up on it, you can develop a taste for it.

 

Hope this all helps, just remember that while you might miss your bread, noodles ect.. Replacing it with something helps in the beginning, but what your body really needs is good nutritious food, so load up on veggies, and drink plenty of water!

Paleo spaghetti and meatballs


Spaghetti is one of my all time favorite meals. So it was one of the first things I had to seek out, as becoming gluten free became essential. Many people say to just go and get gluten free noodles, but my goal in all this is to eat less processed foods. Thus I present the zucchini noodles.

Meatballs:
1 pound of ground beef
1 egg
1/4 of a cup almond flour
Any spices you like, I leave mine plain because I use the meatballs leftover for other things.

Mix together and cook in the oven or on a skillet however you do it.

For the sauce I added veggies like mushrooms to a jar of spaghetti sauce and cooked.

Zucchini noodles:
Zucchini, 2 small per person
olive oil

Use a julianne cutter to slice your zucchini into noodles and sautee them in olive oil for a few min until soft.

Salmon cakes


These lovely salmon cakes, go like hot cakes.

Salmon cakes: Makes 4
2 5oz cans of pink salmon deboned and deskinned
2 eggs
about 1/4 cup almond flour
Dash lemon pepper
Dash of dill

Mix all ingredients in a bowl and place on a george foreman grill for 3-4 min each. I am sure they will be fine a pan that is greased I just chose the foremna grill so they stayed together.

Paleo Ice cream...WHAAAAAT?

Thats right I said Paleo Ice cream! Not only is this healthy, but delicious! The kids did in fact gobble it up, and ask for more. So here is the recipe for this yummy goodness.

Chocolate paleo ice cream: This recipe serves 4-1/2 cup servings

1 14 oz can of coconut milk, be sure it is the full fat, it should have 1/2 cream and 1/2 liquid.
1/4 cup honey (or maple syrup)
1/4 unsweetened cocoa
1 tsp vanilla

Blend all ingredients in a blender until smooth. At this point you can put it into an ice cream maker and follow directions, or pop it in the freezer for about 3 hours until it starts to get hard. We used an ice cream ball maker, we rolled it around for about 10 min and it was ready!! Enjoy!

Paleo cereal


When I first decided to try out paleo I wanted to have a substitute for cereal, even though I have never been a huge ceral person this seemed like a great replacement.

You can make this so many different ways and still be happy with the results. But here is how I like it best, and I eat it every morning.

Paleo cereal:

6 Raspberries
Small handful of blueberries
1/2 of a 1/4 of a cup of coconut flakes unsweetened
1/2 of a 1/4 of a cup of sliced almonds
1 pitted date chopped
1/4 to 1/2 cup of coconut milk (we use vanilla)

Many people like to add rasins or dried cranberries, I find that too much dried fruits can pack on the calories which is good for some but for others losing weight you might want to be wary!

My first Paleo Post.

At first I wasn't sure if I wanted to make a blog about the food I make. But now after making so many amazing descoveries about being paleo, I decided to share. I am fairly new to paleo, I have been dabbling since August 2012, and now it is in full effect. Somedays I do primal, but mostly I stick to paleo. Let me tell you why. For my entire life I have had horrible tummy aches. No one could really tell me why. I have been in and out of the doctors, with no real answers. And to me "take medicine" is not an answer. So I took it upon myself to figure out why this was happening. First I tried to be vegetarian, and while that was helpful to a degree, still had full on stomach aches. I took it a step further, lets try vegan I thought. Nope not that either. After trials and tribulations and many gluten free folks around I decided to give paleo a shot. Instant results. No more stomach aches, no more bloat, I had more energy. I actually liked the taste of real food. "Isn't it hard to say no to the things you used to love?" Many ask but in actually No it's not that hard anymore. At first I thought "why can't I be like everyone and shove my mouth full of yummy treats?" But now I see it really should be the other way around. "Why can't I eat healthful foods that were designed for me and enjoy them?"

And so my intentions with this blog is to share delicious and easy recipes for you and maybe your family too. Thanks!
